Frozen Banana Yogurt Bites

Yields: 12 bites
Prep Time: 15 minutes (hands-on)
Total Time: 25 minutes (hands-on); freezing time 1 hour
A super simple snack, or even dessert, that is loaded with nutrients, yet has no refined sugar, is gluten free and is a delicious healthy treat!
Ingredients
3 cups frozen banana slices
1/2 cup whole milk Greek vanilla yogurt
1 tablespoon almond milk (or preferred milk, can be rice milk if dairy and nut allergy)
1/4 cup mini chocolate chips
Directions
1. Prepare bananas by slicing 3 bananas (about 3 cups) into slices less than ¼ of an inch (makes for an easier time processing). Lay out in a large Ziploc bag and freeze overnight.
2. Place frozen banana slices, ½ cup whole milk Greek vanilla yogurt and 1 tablespoon almond milk (or preferred milk) into the food processor.

3. Begin to process mixture. This will take time and patience. If the processor becomes stuck, stop and use a utensil to help move the pieces around and begin again. Repeat until mixture is completely smooth (can take 5-7 minutes).

4. Spoon mixture evenly (about 1 1/2 tablespoons) into 12 muffin cups. I use silicone muffin cups, and they work extremely well. Use a spoon to lightly even out the mixture. Sprinkle a teaspoon or so of mini chocolate chips on the top of each muffin cup.

5. Place in freezer for at least one hour. When ready to eat, remove wrapper and enjoy with a bowl and spoon, or eat with your hands! Keep in freezer until ready to eat.

I can’t say enough good things about these little bites. From no refined sugar, to nutrients such as potassium, calcium and fiber, this is a snack that has it all. I don’t mind adding a bit of chocolate chips, as it makes this healthy bite really feel like a treat. We have used coconut flavored whole milk Greek yogurt, and the kids and I all enjoy the coconut twist. Next on the list to try is a scoop of peanut butter!
I would recommend using a full fat yogurt, as it helps balance the natural sugars in the bananas and keeps glucose levels from spiking. Plus, a healthy dose of fat satisfies and makes for a well-rounded snack.

Now, as for eating them, I prefer to just take off the wrapper and go in for a bite. My kids, however, enjoy slowing scooping away at the edges with a spoon, as the bite still rests in the silicone wrapper. They do melt quickly as a frozen ice cream treat would, so however you choose to eat, we hope you enjoy!
