Whole Wheat Zucchini Waffles
Yields: about 8 waffles Prep Time: 15 minutes Total Time: 45 minutes
A full cup of zucchini and made with whole wheat flour, these waffles are not only filled with nutrition, they are also incredibly fluffy and delicious.
1 cup shredded zucchini
2 tablespoons cane sugar
1 teaspoon pure vanilla extract
1/4 cup avocado oil (or preferred oil)
2 cups while wheat pastry flour
4 teaspoons aluminum free baking powder
1/2 teaspoon salt
1 cup 2% milk
1. Shred 1 cup of zucchini on the smallest side of a box grater.
2. Cup zucchini and squeeze over bowl or sink to remove excess water.
3. Combine zucchini, sugar, eggs, vanilla and oil in a bowl. Mix well.
4. Add in whole wheat flour, baking powder and salt. Mix well until all ingredients are combined.
5. Slowly add milk, 1/4 cup at a time, mixing well until all milk has been incorporated.
6. Turn on waffle iron and melt a bit of butter for coating. Using a silicone pastry brush, lightly brush each side of the waffle maker.
7. Scoop about 1/3 of a cup at a time into the waffle maker and close lid. Cook until waffle maker indicates.

I love zucchini, as it is so versatile and is a great healthy oil and flour replacement with the right proportions. These are a great waffle that last a few days in the fridge, and even longer in the freezer. If you are freezing, I would recommend separating each waffle with a small piece of parchment paper, which helps prevent the waffles from sticking together.
With school approaching, it is an understatement to say how much I appreciate having a healthy breakfast ready to go. The fiber and minerals from the whole wheat pastry flour add an extra boost of nutrition compared to white flour. Plus, the whole wheat helps keep you full a little longer. Zucchini seems simple, yet is it loaded with vitamin C, fiber, potassium and vitamin A – to name a few! Because of the large amounts of fiber, zucchini is one of those foods that naturally helps you feel full longer. By using it in these waffles, it keeps the moisture content sufficient, without using extra oil.
