Yields: about 3 cups Prep Time: 5 minutes Total Time: 10 minutes (plus 1 day freezing time)
This frozen dessert is simple, and gets most of the creaminess from frozen bananas! Fresh strawberries add vitamin C, fiber and a beautiful pink hue to this naturally vegan and refined sugar free treat!
3 cups frozen bananas, sliced (about 3 medium bananas)*
1 cup fresh strawberries
1 teaspoon pure vanilla extract
*It’s best to peel and cut bananas prior to freezing
1. Slice or break bananas into small pieces and place in the freezer for about a day (or until completely frozen). I use a Ziploc bag, not the best eco-friendly option, but for now, it works best for me. You can also lay out the banana pieces on a tray and cover to freeze.
2. When the bananas are frozen, remove from freezer. Roughly chop strawberries (I’ve even left stems on before.)
3. Place all ingredients in a food processor and process until smooth, taking around 5 minutes total. It helps to stop every minute or so and use a spatula to scrape the sides and make sure the frozen chunks of banana get back into the pureeing area.
4. Serve and enjoy immediately, or store in an airtight container in the freezer for later consumption. We like to add sprinkles (Like the dye free ones in the photo? Check them out here!) and sometimes even whipped cream!
I’ve been going through old posts, and holy moly, there are some old photos and posts! I try not to let my perfectionist tendencies get the better of me, but every once in a while, I retake photos and update old posts. And this is one of them.
I think I originally tried to add Greek yogurt to this recipe, and it was good. We ended up freezing the yogurt prior to mixing in the food processor. It turned out too runny without the yogurt being frozen. However, at the end of the day, everyone preferred the simple strawberry and banana mix. And since time is always of the essence, we dropped the yogurt from the recipe all together.
Strawberry ice cream is a favorite in our house. Well, let me clarify – all those under 10 years of age want the strawberry. My husband and I go for chocolate. But when a frozen fruit dessert is so simple, delicious and healthy, well, geez, it seems like a no-brainer. And that’s how this dish is. It is three ingredients, two if you kick out the vanilla. (Check out Avocado Banana Nice Cream, too!) The best part of this is when the kids start bargaining…can they have another scoop if they eat some carrots first? Umm…yes, I think we can work that out.
