Sun-Dried Tomato and Basil Baked Brie


Yields: about 1/2 pound Prep Time: 5 minutes Total Time: 25 minutes

This baked brie is an easy dish that is rich in calcium and protein (and is really delicious!), and is a favorite simple appetizer for those special times.


1/2 pound brie cheese (there are lighter options, and they will still melt pretty well, so I often opt for these)

1 tablespoon chopped fresh basil

2 tablespoons sun-dried tomatoes in oil


1. Preheat oven to 275 degrees Fahrenheit.

2. Chop the basil and set aside. Chop the sun-dried tomatoes and set aside.


3. Place the brie in the center of an oven-proof dish. (You might want to use the dish on which you are serving the brie to avoid having to transfer one the cheese has melted).

4. Place the chopped basil and sun-dried tomatoes on top of the cheese.


5. Bake at 275 degrees for about 20 minutes. Remove from oven. Serve with crackers, breadsticks or the dipper of your choice!

When I was younger, my mom made baked brie for every fancy occasion. It had sun-dried tomatoes and she served them with plain bread sticks. It was always delicious. I always looked forward to that dish anytime she mentioned we were having people over.

Now, I still use this dish, although have tried various toppings. I added basil to this one, and my oldest said it reminded her of pizza. Other topping ideas are green olives, roasted red peppers, pesto, as well as other fresh herbs.

The temperature of the oven is important. If it’s too high, the cheese will get super melty really fast, and not heat evenly.


I must mention, brie is not known as a “healthy” cheese. Nor am I going to argue for such label. It is pretty heavy, but the benefit I have found to eating smaller bits of denser foods is that I eat less. A few bites of this delicious appetizer is helpful in holding your guests over until the main meal. Additionally, less chips and empty carbs are consumed because this is a heavier cheese, therefore, definitely more filling. And we use it as a component of our “appetizer dinners”. This means when we have just snacks for dinner (usually New Year’s or a similar occasion), we bring this one out in addition to the fruits, veggies, salsa and hummus.

It's not the healthiest, yet it's not the worst. Hey, it could be fried brie! So, this is not something we make all of the time, but it is definitely worth a once in a while treat!
