Vegan Chocolate and Coconut Peppermint Creams

 

 

Yields:  about 36-40 candies              Prep Time:  30 minutes       Total Time:  45 minutes

 

Just five ingredients, real peppermint and healthy fat from coconut butter makes these decadent treats a bit on the healthy side!  The perfect combo of chocolate and peppermint without the preservatives, artificial dyes or colors!

 

Ingredients

1 cup coconut butter

1/2 cup cane sugar

1 teaspoon organic pure peppermint flavor*

 

1 cup semi-sweet chocolate chips (can be dairy and gluten free)

1/2 teaspoon coconut oil

1 teaspoon organic pure peppermint flavor*

 

naturally colored crushed peppermint candies (optional to put on before freezing)

 

*The difference between peppermint flavor and peppermint oil is that pure peppermint oil is simply the oil of peppermint.  Peppermint flavor is the essential oil mixed with sunflower oil to appropriate dilute for consumption. 

 

Directions

1. Prepare silicone candy trays (or whatever you are using to hold creams).  If the molds are floppy, I like to put them on baking try to keep the shape of the candies as they harden.

 

2. In a saucepan on LOW heat, melt the coconut butter, sugar and peppermint oil until a paste forms.

 

 

3. Fill the candy molds half-way full.  Let rest while you prepare the chocolate mixture.

 

4. In a saucepan (I just cleaned and reused the previous one), on VERY LOW heat, melt chocolate chips, coconut oil, and peppermint oil until melted.

 

5. Fill the other half of the candy molds with the chocolate mixture. 

 

6. Place in freezer for about 15 minutes until the peppermint creams harden.  Store in refrigerator or at room temperature, as long as it’s not incredibly warm outside.  To store without concern of melting, just keep in a container in the refrigerator.

 

Every Halloween, I go through my kids’ candy bags and pick out my favorite candies.  Even with my preference for clean eating, I still have a weakness for my old favorites.  However, my body ends up feeling just that – weak.  It just can’t take the ingredients in these candies.  So, I was determined to make my own.

 

The how-to-make component of this recipe has been brewing in the back of my mind; between pick-ups and drop-offs, bedtimes and packing lunches.  I decided to just take the plunge. 

 

I’ve had a doubt that coconut and peppermint would ever mix well.  So, that part always stopped me.  How to make the cream part?  Well, I decided just for the heck of it to take a little of our favorite coconut butter and peppermint oil in a dish with some sugar and let the kids loose on taste-testing. 

 

And what do you know?  It not only tasted good, it was delicious!  I kid you not, it has become my girls' favorite new candy.

 

Coconut butter was my first choice because it is filled with healthy fats, amino acids and even protein.  It’s a pure food, no other ingredients, just the coconut.  I am all for my kids (especially the slightest of them all, who happens to be my picky eater) gobbling these up.

 

Peppermint, especially in the purest form, is known as a digestive aid.  It also is known to help with nausea and even vertigo. 

 

I know chocolate and peppermint go well together, so that was not a concern.  So, all I had to do was figure how to put these little guys together, and voila!  Homemade, clean eating, four ingredient peppermint creams!

 

Because our weather is not very warm out, I can keep these on the counter.  I would probably keep them in the fridge if it were summer.  They stay hard on their own.  Also, because you don’t cook the coconut butter and sugar too long, and it stays on low heat, the sugar crystals maintain a crunch, which just adds an extra layer of texture to these little gems.
