Zucchini is abundant in the garden this time of year! Although, the challenge sometimes can be figuring out what to do with all of it.
Don't overlook this garden staple. Zucchini isn't just a filler ingredient. It has vitamins A and C, which support eye health and the immune system. Also, it is a good source of fiber and is relatively low in calories per serving. Additionally, it is a decent source of potassium. These qualities make it a perfect substitute for (or addition to) baked goods, salads and pretty much anything with cheese!
Below are some favorites from our family, from cheesy dinners to chocolately muffins.
1.) Black Bean and Veggie Burrito Cups
Veggie rich and full of flavor, these burrito cups are crispy and yet have an inside that is loaded with fiber, iron, folic acid and cheesy goodness! Plus, the extra tortilla scraps are turned into homemade tortilla chips to serve right along with the cups!
2.) Whole Wheat Zucchini and Carrot Muffins
Zucchini and carrots come together with whole wheat flour, adding vitamins A, B and C, fiber as well as a fluffy texture to these deliciously sweet and healthy muffins.
3.) Healthy Zucchini Quiche
Great for any meal, this zucchini quiche is filled with protein packed eggs and cheese, and is sure to delight even the pickiest eaters. The zucchini and onion add fiber, potassium, and the bioflavonoid, quercetin.
4.) Zucchini and Pumpkin Spiced Oat Bread
Perfect for using late summer and/or early fall garden harvests, this bread has a bit of a kick, reminiscent of pumpkin pie, bringing the pumpkin and zucchini together in a deliciously sweet & moist bread. Mild enough for the kiddos, this bread packs nutrients from fiber and vitamins A & B.

Millet is an ancient grain that is still used as a staple in many diets around the world, and really helps this salad stand out from the crowd. Rich in nutrients and fiber, this is a delicious and refreshing summer salad.
6.) Double Chocolate Zucchini and Avocado Muffins
Loaded with potassium, vitamins C and E, fiber and healthy fats, these zucchini-filled chocolate muffins have no added butter or oil except for that from a whole avocado. Plus, chocolate chips add a bit of decadence that makes them irresistible!
7.) Cauliflower and Zucchini Mini Pizza Crusts
Using cauliflower and zucchini as main components in this dish makes it a healthier and gluten free alternative to bread dough, yet keeps the flavors reminiscent of your favorite pizza. High in vitamins, minerals and plant nutrients (phytochemicals), cauliflower and zucchini also give an automatic nutrition boost to an old favorite.
8.) Creamy Zucchini and Avocado Soup
This soup gets its creaminess from the nourishing avocado, which also packs potassium, B vitamins and healthy fats. Zucchini and yellow squash give a base for this veggie soup, yet have a mild flavor so as to gently guide young palates in to the world of veggie soups!
