Gluten Free Coconut and Oatmeal Chocolate Fruit Pizza


Yields: about 8 – 10 slices Prep Time: 30 minutes Total Time: 1 hour

A nutrient dense crust of shredded coconut, oatmeal and almond flour is the base for this gluten free fruit pizza. A maple syrup sweetened cream cheese frosting adds just the right amount of creaminess to this festive dessert!


For the crust:

1 cup old fashioned rolled oats

3/4 cup almond flour

1/2 cup unsweetened shredded coconut

1/4 cup softened butter

2 tablespoons coconut oil

1/2 cup packed brown sugar

1/2 cup high quality cocoa powder

1 egg

1 teaspoon pure vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon salt

For the frosting:

1 cup whipped cream cheese

2 tablespoons pure maple syrup

3/4 cup sliced strawberries

1/4 cup blueberries


1. Preheat oven to 375 degrees Fahrenheit.

2. In a large bowl, combine butter, coconut oil, brown sugar, vanilla and egg. Mix until well combined.

3. In a smaller bowl, combine oats, almond flour, coconut, baking powder, salt and cocoa. Slowly incorporate the dry ingredients into the wet mixture.


4. Take the dough out of the bowl and place on a parchment paper (or silicone mat) lined baking pan. Pat out into a circle, about 12 inches in diameter and 1/2 of an inch to 3/4 of an inch thick.

5. Bake at 375 degrees for about 15-18 minutes. Remove from oven and let cool completely. Refrigerate if necessary to cool faster before frosting.


6. Combine whipped cream cheese and maple syrup in a bowl and mix together.


7. Evenly coat pizza with the cream cheese frosting by spreading with a knife or spatula. Place berries in whatever design you prefer. Store in refrigerator before serving.


Fruit pizzas are just fun – plain and simple. To be honest, I am not always a fan of mixing whole fruit in with my food. It is so beautiful, but I have come to the realization how particular of a person I am when it comes to mixing textures. Yet, this fruit pizza just seems to work for me.

The fresh blueberries and strawberries really seem to blend beautifully with the naturally sweetened whipped cream cheese and light cocoa crust. The unsweetened coconut and oatmeal add somewhat of a crunch to the crust.


My kids have really been getting into watching Chopped, a cooking show in which contestants are given a basket of random food items and are challenged to put together a dish. There are judges that then critique the final product and award the contestant with the best tasting and most creative dish.

So, upon being given a slice of this fruit pizza, the “judges” took their seats and began letting me know their thoughts. First, let me say, the plates were cleaned in a matter of minutes. Visually, I could tell all was a success. Yet, I still wanted to hear their opinions.


This is a dessert that needs a fork, like a cake or a pie. It can be a little crumbly, just as a piece of pie. My judges seemed to forget to use a fork, and forged ahead with their hands.

My younger two enjoyed the frosting, which is simply whipped cream cheese and a little maple syrup. They proceeded to lick that off first. Even the fact that it was crunchier (due to rolled oats and shredded coconut) didn’t seem to bother the youngest, who can be off put by crunchier textures.

I chose strawberries and blueberries for the upcoming holiday, but I would definitely branch out with whatever colorful fruit is in season.
