Strawberry and Beet Tropical Smoothie


Yields: about 3 cups Prep Time: 10 minutes Total Time: 10 minutes

This smoothie is full of beets, strawberries, pineapple and coconut butter and is rich in antioxidants, iron, and healthy fats! Plus, it boasts a taste that brings you right into warmer weather (regardless of the temperature outside)!



1 cup frozen strawberries

1/2 cup raw beets, peeled and diced

1/2 cup frozen pineapple pieces

2 cups water

2 tablespoons raw coconut butter


1. Place all ingredients in a high-speed blender and blend until pureed.


2. Serve immediately or place into popsicle molds for later.


*If you are concerned about the power of your blender, use 1/2 warmer water to help warm the frozen fruit.

**Another option is to let the frozen fruit sit in a colander for 15 minutes or so before using so they can thaw a bit and are not as hard to puree.


Beets are one vegetable I eat for nutritional value, but also because I actually enjoy them. As a bonus, beets are beneficial for cleansing the blood, supporting liver health and they are rich in fiber and iron.

Some people find that beet fiber is helpful for minor constipation. So, whether it actually helps or not, I always keep that in mind for my little ones when making this smoothie. Usually smoothies contain bananas, but this one does not, which adds to the reasons it is a good candidate for helping along a slow digestion, as bananas are often used for the opposite purpose.


I use raw coconut butter because one, it tastes decadent. Two, it is full of nutrient dense components. Healthy fats, amino acids and protein are all part of this vegan-friendly ingredient. I always like to add a fat to my smoothies to help balance out the sugar rush to the body, even if it is healthier sugars coming from fruit. Overall, the beets are hardly detectable in taste, but can’t be missed in color. The pineapple and coconut add someone of a Pina Colada aspect to the smoothie, which makes it feel a bit tropical. Simple ingredients and lots of nutrition makes for a win all around!
