Crispy Roasted Beet Chips
Yields: 2 cups Prep Time: 15 minutes Total Time: 45 minutes
Iron and antioxidant rich beets steal the spotlight! When thinly sliced, these little guys crisp right up and with just a hint of salt and olive oil, make a perfect vegetable chip the whole family can enjoy!
3 whole large beets, any variety
1 tablespoon olive oil
1/2 teaspoon salt
1. Preheat oven to 400 degrees Fahrenheit.
2. Peel beets, removing outer skin. Using a mandolin slicer (or by hand), thinly slice beets as thin as possible.
3. Coat with olive oil and salt and mix together.
4. Lay beet slices out on a parchment paper lined baking pan. (Ideally, the beet slices are as separate as possible, but I’m impatient and want to do as many as possible at once.)
5. Bake at 400 degrees for about 20-30 minutes, thinly spread out. Keep removing the done ones, flipping the remaining ones, and placing back in the oven in for 3 -5 minutes at a time until all are crispy.*
*As they cool, they will crisp up even more.
We were having a movie night a while back, and I was determined to have a healthier snack. Often Seaweed Sprinkled Popcorn is a favorite, but I sometimes have a hard time leaving the room when my toddler is eating popcorn. Parent paranoia.
We’re big fans of roasted veggies in this house, and have had beet chips to roasted broccoli chips for every occasion. And this seemed like the perfect time to bring out the beets for our movie gathering.
It may sound like I always say this, but it’s so true. Trying to photograph food, especially desirable food, with kids around is no easy feat! I’ve got hands reaching in, rearranging what I’ve just set up, or the other bumping into the table and/or light source. Arrgg!
To make this one even more challenging, beets aren’t exactly washable like most markers. Luckily that hazard disappears after the chips are cooked, as they aren’t likely to stain at this point. And no one was necessarily interested in chomping on the raw beets, but they sure wanted to get their hands in there!
As I mentioned in the directions, the more you can spread out the slices, the quicker they will cook, dry out and crisp up. However, I just wanted to do this once, so I was willing to do a little hands-on work at the end to keep removing the cooked chips and put the rest back in to crisp up.
Beets have a high sugar content and can burn easily. While, they may appear burnt, it doesn’t necessary mean they are burnt. Part of the darkening is simply the roasting of the vegetable and it cooks and crisps.
As for seasonings, we kept it simple. I’ve seen herbs and spices used in multitude to give these chip a little kick. Get creative!
My suggestion is to prepare a couple of batches at a time, use multiple pans because these go fast and are delicious!
