Almond and Flax Cinnamon Sugar Cookies

 

Yields:  about 32-36 cookies             Prep Time:  15 minutes       Total Time:  45 minutes

 

Inspired by a fondness for all things cinnamon and sugar, these cookies are similar to a snickerdoodle, yet pack all of the goodness of protein, iron, calcium and healthy fats from whole wheat flour, ground flaxseeds and almonds.

 

Ingredients

6 tablespoons butter, softened

1/2 cup cane sugar

1/4 cup quality honey

1 egg

1 1/2 teaspoons pure vanilla extract

1 cup whole wheat pastry flour

1 cup ground almond meal

1/4 cup ground flaxseeds (you can take whole flaxseeds and grind in a coffee grinder)

3/4 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

 

Topping:

1 tablespoon cane sugar

1/4 teaspoon ground cinnamon

 

 

Directions

1. Preheat oven to 375 degrees Fahrenheit.

 

2. Combine the butter, vanilla, honey, sugar and egg in a bowl.

 

3. In a separate bowl, combine whole wheat pastry flour, almond meal, ground flaxseeds, baking soda, salt and cinnamon.

 

4. Slowly incorporate the wet ingredients into the dry ingredients until a dough forms. 

 

5. Take about 1 tablespoon of dough in your hand at a time.  Gently form into a loose ball, and lightly flatten into a disk.

 

6. Place on a cookie sheet lined with parchment paper or silicone, about two inches apart.  Sprinkle with topping.

 

7. Bake at 375 degrees for about 8-10 minutes.  Remove from oven and let cool on pan for a few minutes before transferring to a cooling rack.  Move to a cooling rack and let cool.

 

So, we came home one Saturday from a family outing, and my husband was craving a certain toasted cinnamon crunch cereal.  We haven’t had the original stuff in the house, but the more “pure” (no GMOs, no high fructose corn syrup, artificial colors, etc.) is an occasional treat.  Not that it’s that much better, as it’s still sugar.  At least the main junk is out of there, making it a little more of an enjoyable indulgence!

 

Anyway, he was really wanting some, and we just went grocery shopping.  For us, if we make a second trip back to the store – even for one item – it always turns into another cartful of food.  So, knowing ourselves, we decided against this impulsive trip. 

 

But now, he got me wanting some cinnamon and sugar goodness.  So, I decided to whip up a cookie that encompassed a resemblance of our favorite kid cereal, but of course, I had to add some boosted nutrition.

 

So, while these cookies still have butter and sugar, they also have whole wheat flour, a whole quarter cup of ground flaxseeds (adding fiber and omega-3 fatty acids) and almond meal.  Instead of empty calories, we all enjoyed cinnamon sugar goodness with extra protein, healthy fats, magnesium, calcium and iron!
