Naturally Colored Pink Frosting

Yields: about 1.5 cups Prep Time: 10 minutes Total Time: 10 minutes
Super easy and filled with vibrant color, this is a simple frosting to whip up, without any artificial colors, dyes or preservatives (unfortunately, I think the benefits from beets is minimal)!
Ingredients
2 cups pure powdered sugar
5 tablespoons softened butter
1 teaspoon pure vanilla extract
1 tablespoon whole milk
1 tablespoon peeled, diced beets
Directions
1. Prepare beets and set aside.
2. Place powdered sugar, softened butter, vanilla, milk and beets in a food processor.

3. Process until combined, about 30 seconds to one minute.

4. Use immediately or store in refrigerator or freezer for later use.

Sometimes I am blinded by the beauty of colorful treats that I forget that artificial colors and dyes are not as lovely as they appear. Over the years, I have learned more and more about some of the concerns that these dyes pose to our health, especially for kids. Beets are so awesome, why not make a frosting out of them? They are so colorful and vibrant in their hue, that they make a perfect natural way to color foods.
This frosting can be used with any cookie or cupcake. (Or *ahem*, you could even just with a spoon…)
