Coconut Milk and Cinnamon Sprouted Grain French Toast

 

 

Yields:  8 slices            Prep Time:  10 minutes       Total Time:  30 minutes

 

Dairy free and full of nutrition from sprouted grain bread, this French toast is rich in protein and healthy fats, not to mention it boasts a sweet cinnamon twist!

 

Ingredients

8 slices sprouted grain bread

3 whole eggs, medium

1/2 cup + 2 tablespoons whole fat coconut milk (canned)

1 tablespoon agave nectar (or honey, raw sugar, maple syrup or sweetener of your choice)

1 teaspoon pure vanilla extract

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 teaspoon avocado oil (or preferred cooking oil for pan)

 

Directions

1. Combine coconut milk, eggs, agave nectar, vanilla, cinnamon and salt in a shallow dish.  Whisk together until well combined.  If the coconut milk is separated, sometimes throwing the ingredients in a blender can be helpful.

 

2. Prepare a sauté pan, placing on medium heat and adding the avocado oil.

 

3. Dip a piece of bread in the coconut milk and egg mixture.  Saturate bread and transfer to heated sauté pan.

 

 

4. Cook on one side for about 1 to 2 minutes, until slightly brown.  Flip to other side, cooking an additional 1 to 2 minutes until thoroughly cooked through.  Eat alone or drizzle with pure maple syrup.

 

One of my favorite reasons for this French toast recipe is how nutritiously dense it is.  Sprouted grain bread doesn’t always go over well with the kids.  However, when you coat it in rich coconut milk and eggs, the toughness is erased and it becomes easier to chew without the textural distractions.

 

Personally, I just can’t stomach white or super soft bread.  I need the extra texture and nutrition.  So, this is a mutually beneficial recipe in which the kids and I both win.  A quick note on sprouted bread if you are not familiar.  Some breads are made by sprouting whatever grain is being used and then assembling these sprouted grains into a bread.  Often times soaking the grains in water is the first step.  This is a huge step because soaking helps deactivate the (often) problematic enzyme responsible for inhibiting digesting, phytic acid.

 

One benefit of sprouted grains are thought to be increased digestibility since enzymes are activated (or in the case of phytic acid, deactivated).   Additionally, there is an increased availability of the nutrients as well as lower chances for digestive upset.  Please note, even if the grains are sprouted, it doesn’t make a product safe for gluten intolerances.  Some people who are sensitive to gluten or grains in general, are able to consume sprouted wheat or other gluten grains.  However, sprouted bread does not equal gluten free.

 

Coconut milk really enhances the richness of the French toast.  Some people are weary of coconut and the saturated fat content. Understandably, we do want to watch our saturated fat consumption; however, coconut falls into a slightly different category, alternatively boasting many health benefits.  One benefit is that the fat in coconuts is stable, and less likely to oxidize (think damaged oil).  To read more about coconut oil, click here.
