Cool Kale and Banana Popsicle

Yields: about 2 cups Prep Time: 5 minutes Total Time: 3 hours

High in potassium, vitamins A and C, these popsicles are sure to please anyone – big or small! Coconut butter (or milk) adds a healthy fat to keep these a well-balanced treat.


1 banana

2 lacinato or curly kale leaves, stem removed

2 ice cubes

1/2 cup frozen pineapple

2 tablespoons raw coconut butter (or canned whole fat coconut milk)

3/4 cup water (a tablespoon or so less if using coconut milk)


1. Place all ingredients into a high speed blender and process until well combined.

2. Pour mixture into desired popsicle molds and freeze until frozen. *NOTE: the freezing time depends on the size of the popsicle and amount of contents needed to freeze.

Spoiler alert – this is also a favorite smoothie recipe in our house! Today was warm enough to make a frozen serving of fruits and veggies. It seems I could freeze anything and put it in a cute little popsicle mold, and voila, everyone is more excited to eat! That’s the beauty of the change in season; cool treats on hot days, running around barefoot, swimsuits and swimming pools.

My youngest kiddo is enamored with the whole concept of eating something on a stick, and she continues to let the popsicle drip and she just watches in awe. For her, we prefer to put it in a bowl or small cup and give her a spoon – another way to eat a cool sweet treat!

And these treats aren't just for hot weather. Cool treats are always a hit around here, especially if they are fun shapes and colors! Instead of ice cream, my girls get to pick one of these pops when they are done with dinner. Yes, folks you heard right, they actually ate all of their vegetables at dinner to eat more for dessert!
