Spinach Sugar Cookies with Avocado Frosting

Yields:  36 cookies      Prep Time:  25 minutes       Total Time:  1 hour

 

These cookies are naturally green to help give a colorful boost to any celebration.  The folic acid in spinach is a bonus in the cookies, which are topped with potassium rich avocados replacing the butter in the frosting.  *Gluten free recipe included below original.

 

Ingredients

1 stick butter, softened

1 egg

1/3 cup frozen spinach, chopped

1 cup cane sugar

1 cup unbleached white flour

3/4 cup whole wheat pastry flour

2 teaspoon vanilla

3/4 teaspoon baking soda

1/4 teaspoon baking powder

1/2 teaspoon salt

 

*Ingredients for gluten free cookies

1 stick butter, softened

1 egg

1/3 cup frozen spinach, chopped

1 cup cane sugar

1 1/4 cup gluten free flour mix 

1/2 cup oat flour (or grind oats in a clean coffee grinder)

2 teaspoon vanilla

1 teaspoon baking soda

½ teaspoon salt

 

For the frosting:  (Check out the video here!)

1 cup powdered sugar

1/2 small to medium avocado

1 tablespoon water

 

Directions

1. Preheat the oven to 375 degrees. 

 

2. Place spinach, egg, sugar and vanilla in a food processor and process until blended.  Add flours, baking soda and salt and process until mixture forms a dough.

 

 

3. Spoon about 1 tablespoon mixture into hand and gently roll into a ball.  Gently press into a disk.  Place on parchment paper or silicone lined baking sheet about 2 inches apart.

 

4. Bake at 375 degrees for 8-10 minutes (*12-14 minutes for gluten free).  Remove from the oven and let cool.

 

5. In a blender or food processor, blend the avocado, powdered sugar and water and pulse until combined.  After cookies have cooled, use frosting to lightly coat cookies.  Cookies are best stored in refrigerator or freezer.

 

Originally, these cookies were for a St. Patrick’s Day celebration for my daughter.  Going through various stores, I was inundated with bright green frosting and unnaturally bright colored decorations. 

 

I love celebrations.  Hey, that’s a bonus of having young children – they remind you that you can celebrate even the smallest things – which we do.  Although, St. Patrick’s Day isn’t the smallest thing, it is a day in our house in which we have lots of leprechaun fun!  And I’m a big foodie gal, so of course a celebration needs some festive food! 

 

However, I didn’t want to buy into the artificially colored treats (here are some reasons why I'm not a fan of artificial colors), so I decided to make my own.  I was concerned the spinach wouldn’t keep its color in a baked good, but low and behold, it did!  Where I usually use whole wheat flour in baked goods, I left a little more unbleached white flour to help encourage the lighter color of the cookies.

 

And as for the frosting, avocados offer a great rich texture.  You can taste a hint of avocado, but the sugar does a great job of blending everything together.  And while these cookies still have quite a bit of sugar, they have a couple health bonuses – and hey, there are no artificial colors!

 

The cool thing about getting to make your own festive treats with natural colors is you can use them for any celebration.  These started as a St. Patrick’s Day treat, but also were used for a dinosaur party.  Now, they are on the holiday cookie list as well!
