These rolls are a great addition to any meal, providing an extra boost of vitamins with whole wheat flour. Ground flaxseed adds extra fiber and omega 3 fatty acids to make these a great homemade addition to any meal!
1 cup warm water
4 tablespoon honey
2 tablespoon avocado oil (or preferred oil)
1 teaspoon salt
1 tablespoon whole milk
1 1/2 cup unbleached white flour
1 1/2 cup, plus 2 tablespoons whole wheat pastry flour (may need additional flour if dough is too sticky)
1/2 cup ground flaxseeds
2 teaspoons active dry yeast
1. Combine the warm water, honey, oil and yeast in a large mixing bowl; stir a few stirs and let sit a few minutes until the yeast has risen.
2. In a separate bowl, combine the flours and salt.
3. Add the milk to the yeast mixture and stir.
4. Add the yeast and milk mixture to the flour until combined. Knead until dough is smooth and elastic, about 5-10 minutes.
5. Place dough in a greased bowl (can use a bit of whatever oil you used for the dough), turning once to grease top. Cover with a clean towel and let rise in a warm place (microwave is a good out of the way place) until doubled, about 40 minutes.
6. Punch dough down; knead for a few minutes until smooth and then place in greased bowl again. Let rise in a warm place until almost doubled in size, about 30 minutes.
7. Preheat oven to 350 degrees Fahrenheit. Break dough into palm size pieces (about 1/4 cup) and form into ball. Place on parchment or silicone lined baking sheet.
8. Bake at 350 degrees for 25-35 minutes, until lightly browned and dough is cooked through. Store in an airtight container for 2-4 days, or freeze to keep longer.
There is a certain sense of pride I feel when I can make things at home that I usually would buy. The ability to control (and play around with) ingredients is always a bonus. Once you have a good basic recipe, the possibilities are endless.
As for these little rolls, they are perfect food for involving the little ones. I have them roll out the dough and form it into a basic ball shape, although we have some creative kids, so our shapes are very free form!
Aside from flax, you could add chia seeds on top, or even in the dough. Sprinkling cheese or other seeds, such as sesame or poppy seeds, on top is another option. The best part of these little rolls is when they come out of the oven. Not only are they warm and tasty, they are also full of homemade goodness!
