Apple Cinnamon Pancakes

 

Yields:  about 18-22 pancakes    Prep Time:  15 minutes       Total Time:  45 minutes

 

Adding applesauce to these whole wheat and oatmeal pancakes makes for a naturally sweet pancake with a savory cinnamon twist.  Pancakes boast an extra dose of vitamin C from the applesauce in addition to fiber and iron from the oatmeal.

 

Ingredients

1 cup whole wheat pastry flour

1/2 cup old fashioned rolled oats oatmeal (grind in coffee grinder), or use 1/2 c. oatmeal flour

1 tablespoon cane sugar

3 1/4 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon ground cinnamon

1 egg

1 cup whole milk

1 teaspoon pure vanilla extract

4 ounces unsweetened applesauce (packaged applesauce cups is 4 ounces) or about ¼ cup

1 tablespoon melted butter (plus 1 teaspoon for pan)

 

 

Directions

1. Mix whole wheat flour, ground oats, sugar, baking powder, salt, cinnamon and set aside. 

 

2. Combine applesauce, egg, milk, vanilla and 1 tablespoon of melted butter.  Beat mixture well. 

 

3. Melt 1 teaspoon butter (or preferred oil) in a well heated pan.  Turn heat down to medium-low and pour pancake mixture, about 1/4 cup at a time.

 

4. When pancake starts to bubble, gently flip to other side for 1 minute until cooked through.  Store in an aiartight container in the refrigerator or freezer.

 

This is a super easy and healthy pancake, that tastes sweet and decadent.  By using applesauce, you still get the apple flavor and nutrition such as fiber and potassium, but don't have to do any extra work.   For me, this is a helpful factor when cooking for the kiddos (or even myself) and time is a precious commodity!

 

I started using the small applesauce containers because I would open a large jar and then within a week or two the rest of the jar would go moldy.  It felt awful wasteful.  Although, little plastic cups are somewhat wasteful, but at least I can wash the cups and either recycle or use them for mini paint cups.  I'm not a fan of food packaged in plastic, however, I've learned to pick my battles and just keep the idea of moderation in mind.

 

The smell of cinnamon and apples is one of my favorites, maybe because it signals for me that fall is around the corner.  I am not a fan of temperatures that reach to high or go to low (so I probably shouldn't live in the Midwest).  However, fall is the perfect transition.  Windows can be open and we still don't need winter gear.  So, even when it's not fall, I still get a hint of my favorite season whenever I make these!
