These raspberry jam bars are a crowd-pleaser! Despite being a sweet treat, these bars have fiber and iron from oatmeal and whole wheat flour, plus healthy fats from walnuts or pecans - a win all around!
1 cup whole wheat flour
1 cup old fashioned rolled oats
6 tablespoons softened butter
3/4 cup brown sugar
1/4 cup whole milk
1 teaspoon pure vanilla extract
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup finely chopped walnuts or pecans
1/2 teaspoon cinnamon
3/4 cup raspberry jam
1. Preheat oven to 350 degrees Fahrenheit.
2. Combine the whole wheat flour, rolled oats, brown sugar, salt, baking soda and cinnamon in a large bowl.
3. Dice butter into 1 cm cubes and put into bowl with milk, vanilla and nuts. Using a pastry cutter (or fork), cut butter and the other ingredients into the dry mixture until well combined.
4. Place a little more than half of the mixture in a greased 8 x 8 glass pan. Press into pan with a fork or spatula (or clean hands).
5. Spread jam evenly over mixture. Then add second half of oatmeal mixture on top, gently pressing down.
6. Bake at 350 degrees for 30-35 minutes until golden brown. Let cool completely before cutting. Keep in the refrigerator for best results.
These are a favorite in our house. Although, they do have some healthy boosts by using whole wheat flour, rolled oats and walnuts, these still are made with regular sugar and butter (although, a lot less butter than most recipes). Anyway, my point is, these are perfect for a crowd – although, you’d probably have to make double.
For this post, my youngest helped me make these. She was really bothered that the butter kept getting stuck in the pastry cutter. She kept trying to use the pastry cutter like a mixer, and by the end, she became more interested in turning the faucet on and off to wash her hands. I was OK with that, as I got a chance to quickly get the layers together and get it in the oven!
This is really incredibly easy and comes together so quickly, using only one bowl (plus the baking dish). I use organic raspberry jam from Trader Joe’s, which is a favorite for us. It is sweetened with fruit juice and it works for me.
Again, sometimes I try to switch out the sugar for less refined sweeteners, yet this was not one of them. It is wholesome, made with whole grains, and hey, it’s delicious (especially with some vanilla ice cream)!
