Tasty Turkey Walnut Meatloaf
Yields: 6-8 servings Prep Time: 30 minutes Total Time: 1.5 hours
This is no ordinary meatloaf, with ground walnuts to keep moisture in and an extra punch with veggies mixed right in! Protein, vitamin C, omega 3’s, and iron are all found in this tasty dinner.
1 pound ground turkey meat
1/2 medium red pepper, diced (about 1/2 cup)
1 medium carrot, diced (about 1/2 cup)
2 tablespoon red onion, diced
1 clove garlic
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 tablespoon Worcester sauce
1 teaspoon salt
1/2 teaspoon ground pepper
4 tablespoons tomato paste
1/4 cup ground walnuts
1/2 cup old fashioned rolled oats, ground
2 tablespoons olive oil
For the topping:
1/3 cup ketchup
2 tablespoons brown sugar
1. Preheat oven to 375 degrees Fahrenheit.
2. Combine red pepper, carrot, garlic, and red onion in a food processor and process until chopped, medium to fine.
(This photo shows the chopped veggies right in the pan. Recipe calls for pureeing before cooking. This is ideal for pickier palates, yet equally you could leave it a little chunkier.)
3. Sauté vegetables in 1 tablespoon of olive oil for 2-4 minutes until soft and set aside.
4. Combine oats and walnuts in a food processor and pulse until finely ground.
3. Place ground turkey into a bowl and add vegetable mixture, Worcester sauce, spices, 1 tablespoon of olive oil, egg, tomato paste, walnuts, and oats. Mix together ingredients.
4. Place mixture in a lightly greased 8 x 8 x 2 glass baking dish. Spread the ketchup topping lightly over the entire meatloaf.
5. Bake at 375 degrees for 45-55 minutes. Once removed from oven, let meatloaf sit for 10 minutes before serving. This meatloaf is great by itself or with a little ketchup on the side.
Dinner is my hardest meal, hands down. The daunting thought of finding and creating a balanced recipe to get on the table, not to mention, actually consume without bribery, well, it’s not always easy.
In fact, when 3 o’clock rolls around, my mind starts quickly sifting through my mental file box of recipes and ideas. So, when I have ground turkey thigh in the fridge, I am all set for this recipe.
There is a decent amount of veggies packed right in, more for taste and moisture, but it’s an extra nutritional bonus as well. I am super excited for my youngest to eat this, as it’s a green light for her, lack of teeth and all. My picky middle likes the sweetness of the ketchup topping.
My husband is not the biggest fan of ground turkey, but finds it much more palatable when it’s dark meat and not too dry (he also likes the sweet ketchup topping)! All in all, it works on many levels for many tastes, which is always a plus when 3 o’clock strikes!
